Gastronomy

Good food (spiza, as locals refer to it) is an avoidable part of Hvar's tradition. A healthy, light, mostly cooked food (mainly fish), seasoned with home-made olive-oil and a pinch of herbs that grow everywhere around, accompanied by a glass of good wine, is a reason why people of Hvar live long and look so vigorous.

Sea- food risotto
(for 4 persons)
RECIPE:
Fry about one kilogram of sea-food (scampi, mussels, shrimps - depending on availability) on olive -oil, garlic and parsley. Add quality white wine, and at the end add finely sliced tomatoes.
Stir in rice (about fistful per person), and cook until soft.
Just before serving, sprinkle a pinch of marjoram and parsley.
Hvar gregada
(for 4 persons)
RECIPE:
Clean a kilogram of quality, various fish (white fish), four potatoes, four onions, a clove of garlic and spring of parsley. Cut everything in large pieces, and put in a pot, in layers.
Season with salt and pepper, add one decilitre of olive-oil, and add water so it just covers the fish.
Simmer until potatoes are soft.
